Oats n Honey Bars

Trying to get away from processed and sugary granola bars???

Try these! You won't regret it!


Ingredients :

-3 cups old-fashioned rolled oats

-1 cup puffed brown rice cereal

-1/2 cup finely ground cornmeal

-1/2 teaspoon ground cinnamon

-1/2 teaspoon baking soda

-1/2 teaspoon kosher salt

-1/2 cup of honey

-1/3 cup of coconut oil

-1 tablespoon coconut sugar or light brown sugar

-2 teaspoons pure vanilla extract

-Nonstick cooking spray


Directions:

-Preheat oven to 350. Line a 9 x 13- Inch baking dish with parchment paper.

-In a bowl, combine the oats, cereal, cornmeal, cinnamon, baking soda, and salt.

-Put 1/2 cup of the honey and the coconut oil in a microwave safe bowl. Microwave for 30 seconds - 1 min, or until melted. Stir in the coconut sugar and vanilla. Whisk to combine.

-Pour honey mixture over the oats and toss well, being sure all of the oats are coated. Transfer the oat mixture to the prepared baking dish. Spray the bottom of a drinking class with cooking spray. Press down on the oats with the bottom of the glass to pack in to baking dish.

-Bake for about 15 mins, until golden. Remove and drizzle with honey. Bake for 5-8 more mins until deep golden on top.

-Remove from oven and let cool NO LONGER than 15 mins or they will be miserable to cut.

-After cutting let cool, and store in sealed container.
