Rotisserie Broccoli Cheddar Soup

You all must know by now that I lovvvve a good soup!

This has so much flavor, and I have also been on this broccoli kick because of its amazing health benefits. See my blog on aging backwards!


Ingredients :

  • 1 tbsp butter

  • 1 medium yellow onion, finely chopped

  • 1/4 cup salted butter

  • 1/4 cup all purpose flour

  • 2 cups chicken broth

  • 2 cups half and half

  • 12 oz fresh broccoli, roughly chopped (I used a head and half)

  • 2 carrots, peeled and chopped

  • salt, paprika, garlic

  • 2 cups sharp cheddar cheese

  • 2 Breast of rotisserie chicken




Directions :

  1. Add 1 tbsp butter to pot and heat over medium heat. Add in chopped onion and saute until soft and translucent. Add in 1/4 cup butter. Once melted add in in 1/4 cup of flour and whisk for about 1 min.

  2. Slowly pour in 1 cup of chicken broth, whisking as you pour. Then continue with the second cup of broth and both cups of half and half. Remember to pour slowly and whisk as you pour for about 2 mins.

  3. Add in broccoli and carrots, season to taste. Reduce heat to medium/ low and simmer for about 10 mins.

  4. Add in both rotisserie chicken breasts, cover pot and let simmer for about 5-8 more mins until broccoli and carrots are fork tender.

I actually added about an extra cup of chicken broth because I really enjoy broth. This is totally up to you.


I heated this up on the stove top today, and it was even better!
